satay beef noodles

ingredients:

  • 1 lb flank steak (thinly sliced)
  • 1 shallot (minced)
  • 5 cloves garlic (minced)
  • 1 tbsp satay sauce
  • 1 tsp shrimp paste
  • 2 cups of water
  • 1 tsp soy sauce
  • 1 tsp chicken bouillon
  • 1 tsp white pepper
  • 1 tsp oyster sauce
  • 2 tsp sugar
  • 2 tsp corn starch
  • neutral oil
  • ramen noodles

marinade ingredients:

  • 1/2 tsp chicken bouillon
  • 1 tsp baking soda
  • 1 tsp white pepper
  • 2 tsp soy sauce
  • 1 tsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tsp sugar
  • 2 tsp corn starch
  • 2 tbsp water

soup broth ingredients: 2 cups chicken broth (bouillon with 2 cups of water if you don’t have chicken broth)

Instructions:

  1. Thinly slice your flank steak, against the grain. 
  2. Mix together the marinade ingredients listed above in a bowl, and then add your beef slices in. Mix well to marinate, for up to an hour but best results overnight. 
  3. Right before you’re ready to cook the beef, drizzle some oil over and massage it in.
  4. Heat up a wok on high heat, and add about 3 tbsp of oil. When the wok starts to smoke, it’s time to cook! 
  5. Add in your flank steak slices to the hot wok in a single layer. Let the beef sear for 1-2 minutes before flipping. Cook another 1-2 minutes on the other side. Remove and set aside. 
  6. In the same wok, lower the heat to medium and add in some more oil. Follow with shallot and garlic, and toast for 30 seconds. 
  7. Then, add in 1 tbsp of satay sauce and 1 tsp shrimp paste. Mix into the shallot and garlic. 
  8. Add in 2 cups of water and let it come to a boil. While it comes to a boil, add in 1 tsp of chicken bouillon, 1 tsp oyster sauce, 1 tsp white pepper, 1 tsp soy sauce, and 2 tsp of sugar. 
  9. Mix together a corn starch slurry (2 tsp corn starch with 2 tbsp of water) and pour into the sauce to thicken it. Adjust if you like the sauce to be thicker. 
  10. Once the satay sauce is ready, add the beef back in and cook for another minute or until the beef is cooked through. 
  11. In a separate pot, cook your ramen noodles in a chicken broth base. I don’t use the ramen seasoning packets because we want the flavor to come from the satay beef sauce, so the base broth should be simple! 
  12. In a bowl, add the ramen and broth with the satay beef on top. The sauce from the beef will flavor the simple, clear broth for a yummy noodle soup. Enjoy!
