hong kong macaroni soup (serves 2)

~ingredients:

  • 1 cup macaroni
  • 2 cups chicken broth
  • 1 cup water
  • 1 tsp soy sauce
  • 1 tsp white pepper
  • 1 tsp sesame oil
  • 1 tsp chicken bouillon
  • 1/2 can of spam (cubed)
  • 1 cup of frozen peas and carrots
  • 2 eggs

~instructions: 

  1. In a pot with heavily salted boiling water, cook your macaroni according to package directions. 
  2. In a separate pot, prepare the soup base with 2 cups chicken broth, 1 cup water, 1 tsp soy sauce, 1 tsp white pepper, 1 tsp sesame oil, and 1 tsp chicken bouillon. Bring to a boil before adding in the frozen peas and carrots to cook. 
  3. Heat up a pan on medium heat and add a little bit of oil. Once hot, add in your cubed spam and cook until seared. Remove from pan.
  4. Then, in the same pan, add some more oil and crack 2 eggs. Let the eggs fry for 2 minutes on both sides, but before flipping, sprinkle some salt! 
  5. In a bowl, add in the macaroni, spam, and soup base. Top with your egg and enjoy!
