kale pomegranate salad

~ingredients (serves 2):

  • 4 cups kale
  • 1/2 red onion
  • 1/2 cup chopped parsley
  • 1/2 cup carmelized walnuts
  • 1/4 cup goat cheese
  • 1/4 cup pomegranate seeds
  • dressing ingredients:
    • 1/3 cup of olive oil
    • 2 tbsp of red wine vinegar
    • 3 tbsp of honey
    • 3 tbsp of dijon mistard
    • salt
    • pepper

~instructions: 

1. Wash and dry kale. Roughly chop the kale, set aside.

2. Slice 1/2 red onion into thin strips. Soak it in water for 10 minutes so it has less of a bite to it. 

3. Make the dressing: mix all dressing ingredients together. Taste and adjust as necessary.

4. Drain red onion and mix with kale. Pour dressing over the kale and mix throughly. Place in fridge for minimum 30 minutes (longer the better). Letting the kale marinate in the dressing makes it softer and it soaks up the dressing flavor.

5. Before serving, take out from fridge and add in the rest of the ingredients: goat cheese, pomegranate seeds, carmelized walnuts, and parsley.

6. Give it a good mix and serve!
