~ingredients:
- 4 pork chops
- marinade: 4 tbsp lemongrass (minced), 2 tbsp garlic (minced), 2 tbsp shallots (minced), 2 tbsp sugar, 2 tbsp soy sauce, 2 tbsps fish sauce, 2 tbsp oil
- dipping sauce: 3 tbsp water, 1 tbsp fish sauce, 1 tbsp sugar, 1 tbsp lime juice, 1 garlic (minced), 1 bird’s eye chili (sliced)
~instructions:
- Using a meat tenderizer, pound the pork chops between saran wrap until they are thin.
- In a mixing bowl, combine the marinade ingredients and mix well.
- Add in your pork chops to the marinade and massage until each piece is coated with the marinade on both sides.
- Marinate overnight.
- When ready to cook, shake off any excess marinade. Use a meat scissor and snip 1 inch deep along the edges, this will prevent the pork chops from curling in when cooking.
- Heat up a pan on medium high heat, with oil.
- Once hot, add in the pork chops, and pay fry 2 minutes, each side. Or until meat reaches 145°F.
- Serve over rice, with a side of dipping sauce. Enjoy!
