lemongrass pork chops

~ingredients:

  • 4 pork chops 
  • marinade: 4 tbsp lemongrass (minced), 2 tbsp garlic (minced), 2 tbsp shallots (minced), 2 tbsp sugar, 2 tbsp soy sauce, 2 tbsps fish sauce, 2 tbsp oil 
  • dipping sauce: 3 tbsp water, 1 tbsp fish sauce, 1 tbsp sugar, 1 tbsp lime juice, 1 garlic (minced), 1 bird’s eye chili (sliced)

~instructions: 

  1. Using a meat tenderizer, pound the pork chops between saran wrap until they are thin. 
  2. In a mixing bowl, combine the marinade ingredients and mix well. 
  3. Add in your pork chops to the marinade and massage until each piece is coated with the marinade on both sides. 
  4. Marinate overnight.
  5. When ready to cook, shake off any excess marinade. Use a meat scissor and snip 1 inch deep along the edges, this will prevent the pork chops from curling in when cooking. 
  6. Heat up a pan on medium high heat, with oil.
  7. Once hot, add in the pork chops, and pay fry 2 minutes, each side. Or until meat reaches 145°F. 
  8. Serve over rice, with a side of dipping sauce. Enjoy!
