thai basil chicken (pad krapow gai)

~ingredients:

  • 1 lb ground chicken
  • 3 birds eye chilies
  • 5 cloves garlic
  • 3 shallots
  • 2 tsp sugar
  • 1 tbsp dark soy sauce
  • 1 tbsp fish sauce
  • 1/3 cup water w/ 1 tsp chicken bouillon
  • 1 cup thai basil leaves

~instructions: 

  1. Thinly slice your garlic and shallots (i like to use a mandoline) 
  2. De-seed the birds eye chilies, and thinly slice. Retain some seeds depending on your preferred spice level.
  3. Remove the leaves from the thai basil leaves, and set aside. Discard the stems. 
  4. Heat a wok over high heat with oil. Once hot, add in the garlic, shallot, and chilies. Fry for a minute, until fragrant. 
  5. Add in the ground chicken, and fry for 2 minutes before breaking into small pieces. 
  6. Add in the sugar, dark soy sauce, and fish sauce. Stir fry for another minute. 
  7. Add in the water/chicken bouillon mixture and let the group chicken cook for another minute. 
  8. Add in the basil and stir fry until wilted. Turn off the fire once the basil is wilted. 
  9. Enjoy over rice!
