creamy miso mushroom pasta

~ingredients:

  • 2 servings pasta
  • 1/2 cup pasta water 
  • 8 oz brown mushrooms
  • 4 cloves garlic 
  • 2 tbsp butter
  • 1/3 cup heavy cream 
  • 1 tbsp miso paste 
  • 1/2 cup parmesan cheese 
  • 1 tbsp neutral cooking oil

~instructions: 

  1. Veggie prep: slice the mushrooms into thin slices and mince the garlic.
  2. Bring a pot of water of boil and salt generously. Cook the pasta according to package directions. 
  3. In a separate pan, heat up on medium-high heat. Add 1 tbsp oil, and let that heat up.
  4. Add in the sliced mushrooms and saute for 3-5 minutes, stirring occasionally. 
  5. Add in the garlic, and continue cooking the mushrooms, releasing liquid as it cooks. 
  6. Once the mushrooms are soft, add the butter, heavy cream, and miso paste. 
  7. Stir vigorously until the miso has dissolved and a sauce has formed. 
  8. Add in 1/2 cup of pasta water to thicken the sauce. 
  9. Add in your pasta and toss to coat the pasta in the sauce. Turn off the heat.
  10. Add in parmesan cheese and toss to combine. Serve and enjoy!
