- 2 servings pasta
- 1/2 cup pasta water
- 8 oz brown mushrooms
- 4 cloves garlic
- 2 tbsp butter
- 1/3 cup heavy cream
- 1 tbsp miso paste
- 1/2 cup parmesan cheese
- 1 tbsp neutral cooking oil
~instructions:
- Veggie prep: slice the mushrooms into thin slices and mince the garlic.
- Bring a pot of water of boil and salt generously. Cook the pasta according to package directions.
- In a separate pan, heat up on medium-high heat. Add 1 tbsp oil, and let that heat up.
- Add in the sliced mushrooms and saute for 3-5 minutes, stirring occasionally.
- Add in the garlic, and continue cooking the mushrooms, releasing liquid as it cooks.
- Once the mushrooms are soft, add the butter, heavy cream, and miso paste.
- Stir vigorously until the miso has dissolved and a sauce has formed.
- Add in 1/2 cup of pasta water to thicken the sauce.
- Add in your pasta and toss to coat the pasta in the sauce. Turn off the heat.
- Add in parmesan cheese and toss to combine. Serve and enjoy!
