(with minimal ingredients)
~ingredients:
- 1 lb flank steak (sliced against the grain)
- beef marinade: 1 tbsp oyster sauce, 1 tbsp soy sauce, 2 tbsp water, 2 tsp corn starch, 1 tsp baking soda, 1/2 tsp white pepper, 1 tbsp oil
- 2-3 broccoli (chopped into pieces)
- sauce: 1 tbsp oyster sauce, 1 tbsp soy sauce, 1 tsp dark soy sauce, 1 tbsp water, 1 tbsp shaoxing wine, 1 tsp sugar, 1/2 tsp white pepper
- corn starch slurry: 1 tsp corn starch + 2 tbsp water
- sesame seeds (garnish)
~instructions:
- To prepare the beef, soak the beef slices in water for 30 minutes. Massage and rinse a couple times to wash away the blood and impurities. Drain after 30 minutes, pat to dry.
- Mix the marinade ingredients and marinate beef for a minimum of 30 minutes, but best overnight. If marinating overnight in fridge, make sure the beef is at room temp before cooking.
- Blanch the broccoli in a pot of boiling water for a minute. Drain and set aside.
- Heat up a wok on high heat with neutral oil. Once the wok is smoking, add in the beef in a single layer.
- Let the beef cook, searing on one side for a minute before flipping. Cook the beef about 70% of the way. Remove and set aside.
- In the same wok, add a little more oil, then add in the broccoli. Stir fry for a minute, before adding the meat back in.
- Pour in the sauce, along with the corn starch slurry. Mix and stir until sauce has thickened.
- Once broccoli and beef is cooked to your liking, turn off the heat.
- Serve over rice, and garnish with sesame seeds. Enjoy!
