- 1 lb pork spare ribs
- 1 lb daikon
- 4 green onion
- 2 inch knob of ginger
- 2 quarts water
- 3 cloves garlic
- 2 tsp kosher salt
- 1 tsp white pepper
- 2 tbsp shaoxing wine

~instructions:
- Chop the daikon in half, and chop each half into 1 inch wide half-moon pieces.
- Slice the knob of ginger into thin slabs and cut 3 stalks of green onion in half.
- Dice remaining 1 green onion into smaller pieces, and the cilantro, for garnish later.
- Peel and smash the garlic.
- Place the pork spare ribs into a pot and fill with just enough water to cover.
- Place the pot on the stove and bring it to a boil. Once it starts to boil, immediately turn off the heat and drain. Rinse the pork ribs under cold water.
- In a dutch oven/soup pot, place the pork ribs into the pot, followed by the green onion, ginger, and garlic.
- Fill the dutch oven with 2 quarts of water.
- Turn on the heat to a medium high. Add salt, white pepper, and shaoxing wine.
- Once the dutch oven comes to a boil, lower to a simmer and cover. Simmer for 15 minutes.
- Uncover and add in the daikon. Cover and simmer for another 15 minutes.
- Uncover, taste, and season with more salt if needed.
- When the daikon is soft enough for your liking, turn off the heat.
- Top with green onion and cilantro and serve, enjoy!
