~ingredients:
- 1 lb fresh shrimp
- 5 slices ginger
- 2 garlic cloves
- 2 green onion
- 1 tbsp sugar
- 3 tbsp ketchup
- ½ tsp white pepper
- 2 tbsp shaoxing wine
- 1 tbsp soy sauce
- neutral cooking oil
~instructions:
- Peel and devein your shrimp, pat dry and set aside.
- Slice your ginger into thin slices, and mince the garlic. Chop the green onion into 2 inch pieces.
- To cook, heat up a pan on medium-high heat with 1 tbsp of cooking oil.
- Once hot, add in the shrimp and sear on one side for 1 minute, before flipping and cook for another minute. Remove from the pan.
- In the same pan add a little more oil.
- Add in the ginger, garlic, and white parts of the green onion.
- Fry the aromatics for 30 seconds, and turn down the heat.
- Add in the ketchup, shaoxing wine, sugar, white pepper, and soy sauce.
- Stir to mix the sauce and then turn up the heat a little. The sauce will bubble and continue to cook it down, until it starts to thicken.
- When the sauce has thickened, add back in the shrimp, and the green parts of the green onion.
- Toss the shrimp in the sauce, and cook for another minute before turning off the heat. Serve and enjoy!
