ketchup shrimp stir-fry

~ingredients:

  • 1 lb fresh shrimp
  • 5 slices ginger
  • 2 garlic cloves
  • 2 green onion
  • 1 tbsp sugar
  • 3 tbsp ketchup
  • ½ tsp white pepper
  • 2 tbsp shaoxing wine
  • 1 tbsp soy sauce
  • neutral cooking oil

~instructions:

  1. Peel and devein your shrimp, pat dry and set aside.
  2. Slice your ginger into thin slices, and mince the garlic. Chop the green onion into 2 inch pieces.
  3. To cook, heat up a pan on medium-high heat with 1 tbsp of cooking oil.
  4. Once hot, add in the shrimp and sear on one side for 1 minute, before flipping and cook for another minute. Remove from the pan.
  5. In the same pan add a little more oil.
  6. Add in the ginger, garlic, and white parts of the green onion.
  7. Fry the aromatics for 30 seconds, and turn down the heat.
  8. Add in the ketchup, shaoxing wine, sugar, white pepper, and soy sauce.
  9. Stir to mix the sauce and then turn up the heat a little. The sauce will bubble and continue to cook it down, until it starts to thicken.
  10. When the sauce has thickened, add back in the shrimp, and the green parts of the green onion.
  11. Toss the shrimp in the sauce, and cook for another minute before turning off the heat. Serve and enjoy!
