black bean spare ribs

~ingredients:

  • 1 lb spare ribs (cubed)
  • 1 tbsp oyster sauce
  • 1 tsp fish sauce
  • 1 tbsp black bean sauce
  • 1 tbsp soy sauce
  • 1 tbsp baking soda
  • 1 tbsp corn starch
  • 1 tbsp shaoxing wine
  • 1 tsp white pepper
  • 1 tbsp sesame oil
  • 1 tbsp water

~instructions:

  1. In a bowl, wash the spare ribs and drain. Fill the bowl with fresh water and let the spare ribs soak for 30 minutes which will remove the blood. We do this so the spare ribs are paler in color once cooked (which is what we want). 
  2. Drain the spare ribs and pat dry. Transfer to a mixing bowl. 
  3. Add the above ingredients to the spare ribs, and mix thoroughly with your hands. 
  4. Set aside to marinate. If pressed for time, minimum of 30 minutes, but for best results I usually marinate the night before ๐Ÿ™‚ 
  5. Steaming In the rice cooker: you can place the spare ribs onto a steaming basket. My rice cooker came with one that fits perfectly on top. 
  6. To steam in a wok: fill the wok with water and bring to a boil. Once boiling, place a dish with the spare ribs onto a steaming rack. Cover and steam for 25 minutes. 
  7. Once cooked, top with green onion and enjoy with rice ๐Ÿ™‚
