braised pork belly

Ingredients:

  • pork belly(cut into 1-1.5 inch pieces)
  • rock sugar (around 2 tbsp)
  • shiitake mushrooms
  • green onion, oil
  • garlic (5 cloves)
  • shaoxing wine (1 cup)
  • water (1 cup)
  • soy sauce (3 tbsp)
  • dark soy sauce (1 tbsp)

Instructions: 

  1. Soak shiitake mushrooms early in the day (save the water)
  2. Blanch the pork belly for a couple of minutes, this gets rid of any impurities 
  3. Drain and rinse the pork belly
  4. Add oil into your pan and follow with the pork belly once the oil is hot 
  5. When the pork belly has browned, add in rock sugar 
  6. Add in shaoxing wine, mushroom water, soy sauce, dark soy sauce, garlic, mushrooms
  7. Bring to a boil, simmer for 1 hour
  8. Check in on it occasionally and add water if it gets low. If adding water, balance it with some more soy sauce 
  9. Once tender, turn off the heat. You can pierce it with a fork to test if it’s tender enough for your liking. 
  10. Top with green onion and serve over rice!
