Ingredients:
- pork belly(cut into 1-1.5 inch pieces)
- rock sugar (around 2 tbsp)
- shiitake mushrooms
- green onion, oil
- garlic (5 cloves)
- shaoxing wine (1 cup)
- water (1 cup)
- soy sauce (3 tbsp)
- dark soy sauce (1 tbsp)
Instructions:
- Soak shiitake mushrooms early in the day (save the water)
- Blanch the pork belly for a couple of minutes, this gets rid of any impurities
- Drain and rinse the pork belly
- Add oil into your pan and follow with the pork belly once the oil is hot
- When the pork belly has browned, add in rock sugar
- Add in shaoxing wine, mushroom water, soy sauce, dark soy sauce, garlic, mushrooms
- Bring to a boil, simmer for 1 hour
- Check in on it occasionally and add water if it gets low. If adding water, balance it with some more soy sauce
- Once tender, turn off the heat. You can pierce it with a fork to test if it’s tender enough for your liking.
- Top with green onion and serve over rice!
