- 2 salmon fillets
- 3 slices ginger
- 1 tbsp fermented black beans
- 1 tbsp shaoxing wine
- 1 tbsp soy sauce
~instructions:
- Pat dry the salmon fillets.
- Add shaoxing wine to the salmon fillets, rubbing it all over.
- Place the salmon in a dish, and top the salmon with thinly sliced ginger, and fermented black beans.
- Pour soy sauce over the fish, and let the fish rest for around 15 minutes.
- In the meantime, fill a wok with water (enough for a steaming rack), and place over high heat to boil.
- Once the water in the wok comes to a boil, carefully place the plated salmon onto the steaming rack.
- Cover, and lower the heat slightly to a medium-high. Steam the salmon for 5 minutes.
- After 5 minutes, turn off the fire, but don’t uncover the wok yet. Steam for another 1-2 minute, depending on how done you like your salmon.
- Remove the salmon from the wok, and serve. Enjoy over rice!
