steamed ginger salmon with fermented black beans

~ingredients:

  • 2 salmon fillets
  • 3 slices ginger
  • 1 tbsp fermented black beans
  • 1 tbsp shaoxing wine
  • 1 tbsp soy sauce

~instructions:

  1. Pat dry the salmon fillets.
  2. Add shaoxing wine to the salmon fillets, rubbing it all over. 
  3. Place the salmon in a dish, and top the salmon with thinly sliced ginger, and fermented black beans. 
  4. Pour soy sauce over the fish, and let the fish rest for around 15 minutes. 
  5. In the meantime, fill a wok with water (enough for a steaming rack), and place over high heat to boil. 
  6. Once the water in the wok comes to a boil, carefully place the plated salmon onto the steaming rack.
  7. Cover, and lower the heat slightly to a medium-high. Steam the salmon for 5 minutes. 
  8. After 5 minutes, turn off the fire, but don’t uncover the wok yet. Steam for another 1-2 minute, depending on how done you like your salmon. 
  9. Remove the salmon from the wok, and serve. Enjoy over rice!
